Mt. Lassen Trout (partner since 2015 and FishChoice featured supplier) has been producing rainbow trout since 1949 using cold, fresh spring water that flows from the base of Mt. Lassen. Mt. Lassen Trout produce fingerlings from their own selectively bred broodstock, and once raised to the appropriate size, the trout are moved to “raceway” systems (a Seafood Watch ‘Best Choice’) to reach market size. The raceway systems are kept at a higher water velocity than most farmed trout, creating a trout that is stronger and more muscular.
